  • mixed nuts2 cups of mixed nuts

  • erythritol1 cup of erythritol or stevia
  • vanilla extract1 teaspoon of vanilla extract

  • sour cream1/2 cup of sour cream

Instructions

  1. Start by preheating your oven to 350°F (175°C).
  2. Blend the mixed nuts until they are finely ground, then combine them with the melted butter and salt in a bowl.
  3. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  4. Bake the crust in the preheated oven for about 10 minutes, then set aside to cool.
  5. In a large bowl, beat the cream cheese until it's smooth.
  6. Gradually add the erythritol or stevia, vanilla extract, eggs, and sour cream to the cream cheese, mixing well after each addition.
